Tiger Nut Cookie Dough Balls

Ingredients
1/2 cup Tigernut flour
1 cup of nut butter of your choice * see note for modification
1 tbls maple syrup
1/8 tsp Himalayan sea salt
1 tsp vanilla
Method
Place all ingredients in a Thermomix or food processor and mix well. If it's too dry add some extra maple syrup. Roll into small bit size balls. Place in fridge to set and resist eating them all ?
Note: I used 3/4 cup of nut butter and 1/4 cup of Pureharvest COCO2 Almond spread, bought from Woolies or Coles . Adds a nice chocolate flavour. Use could also do half nut butter and half COCO2 Almond spread. The choice is yours!
I have also added choc chips. Yummy ?
